There are whorls, swirls and curls in an animal’s hide that can tell you if he/she has tender beef, once you learn to see where they are and what they are telling you. Fine bones have fine textured beef attached to them — you can identify a fine bone with the eye and your fingertips. Once you master this art, there will be no need to use DNA or ultrasound to make sure your customers are happy.
